Chocolate Peanut Butter Balls

These are my dad's favorite! Not exactly the healthiest recipe but they are small and I think you can have a little bit of everything in moderation :)

Chocolate Peanut Butter Balls

 

Ingredients

1/4 cup of melted Earth Balance Brand Butter
1 cup Peanut Butter
2 cups Crispy Rice Cereal
1.5 cups of Dark Chocolate Chips
1 cup Powdered Sugar
Candy Sprinkles (optional)

Directions:

Melt Butter. Once melted stir together with peanut butter until combined. Stir in crispy rice cereal and powdered sugar- you may need to use your hands to get the right consistency. Form tablespoon size balls with the peanut butter mixture. Place on a cookie sheet lined with parchment paper. Refrigerate for 3 hours. Melt chocolate chips in a microwave safe bowl stirring every 30 seconds until the chocolate is melted. One at a time dip the peanut butter balls into the melted chocolate. Place back onto the cookie sheet. You can sprinkle with candy sprinkles after this step if you wish. Refrigerate until chocolate is hardened (usually about 1 hour).

Vegan Banana Chocolate Chip Bread

We LOVE banana bread. Was out of eggs one day and invented this vegan friendly recipe- better than the traditional version !

Vegan Banana Chocolate Chip Bread

Ingredients:

4 Over Ripe Bananas (I usually freeze really ripe bananas and let them thaw out for this recipe)
1/2 cup of brown sugar
1/2 cup of vegetable oil
1 tsp of vanilla extract
1.5 tsp baking powder
1/2 tsp of baking soda
1/8 tsp of salt
1/4 tsp of cinnamon
1/8 tsp of nutmeg
1.5 cups of flour
1/2 cup dark chocolate chips (optional)

Directions:

Preheat the oven to 350 degrees. Grease your loaf pan. Mash bananas and sugar together until it is well blended. Add oil, vanilla, baking powder, baking soda, salt, cinnamon, nutmeg, and flour. Using a mixer- mix for 2 minutes. Add chocolate chips. Stir until chocolate is combined. Pour mixture into loaf pan. Bake for 30-40 minutes. Cool for 20 minutes before removing from pan. Makes 1 loaf.

Buttercream Frosting

I made some healthier substitutions to one of my favorite frosting recipes. It works great with any cake, cupcake, or cookie. Food coloring can also be added.

Ingredients

1 stick of Earth Balance Brand Butter softened
5 cups of Powdered Sugar
1 tsp of Vanilla Extract
4-6 tbsp of Almond Milk

Directions

Cream the Butter. Add the Sugar, Vanilla, and Milk. Blend with a hand mixer until it reaches a thick enough consistency. Spread onto cake or cupcakes using a knife or spoon into piping bag and decorate as desired. Makes enough to frost one cake or 24 cupcakes.
